Seeing as the E6750 is selling for less than the E6600 at the moment, would
it be sensible to install an E6750 on an Asus P5WDG2 WS Professional
motherboard (max FSB 1066MHz)?

No not really, If your motherboard does not support 1333FSB and there is no BIOS update then the chip most likely wont be recognised. The E6750 is an excellent chip and overclocks brutally but if you google for a good batch/production number/week for a E6600 you could get one that clocks to near 4Gig and the good thing with the 6600 is it comes with the 9x multi (as opposed to 8x with the 6570) which means it wont be as harsh on your motherboard when overclocking high.
You need BIOS 0805 and later to run 1333 CPUs
