I would guess the paper on the back of the PCB is to pretect if from shorting IF it is used in a different type of case. Perhaps if they deside to release a version in a metal casing, one that is more styled towards the look of an iPod.
It could also be to protect the rubber on the casing from the sharp points. Just my thoughts.
